Summary

A chef resume is a one to two page document showing that you can run a kitchen as a profit and loss center, not just cook on it. This guide gives you three adaptable versions, the cost and covers numbers that belong on the page, the American Culinary Federation certification ladder, and current Bureau of Labor Statistics pay and outlook for chefs and head cooks.

Chef resume examples by experience level

A chef resume is a one to two page document proving you can hold a food cost, hold a labor cost, and put plates out at volume without either number moving the wrong way.

Cooking is assumed. Nobody interviews a chef to find out whether they can cook; the stage does that, and it happens after the resume has already worked. The resume answers a narrower, more commercial question: can this person be handed a kitchen with a budget attached. The Bureau of Labor Statistics lists five years or more in a related occupation as the typical requirement for chefs and head cooks (BLS Occupational Outlook Handbook, last modified 27 August 2026), which tells you what a reader assumes about your knife skills and what they do not assume about your spreadsheets.

Resume guide for a chef resume

This guide and the corresponding chef resume example will cover:

  • How to write a chef resume, section by section
  • Why food cost, labor cost and covers belong above your menu philosophy
  • Three adaptable summaries: first head chef role, executive chef and multi-outlet
  • What the American Culinary Federation ladder is worth and how to write it
  • What the job market looks like and what you can expect to earn

How to write a chef resume

Six sections: contact header, summary, kitchen experience, operating numbers, education and certifications, and skills. One page if you have led one kitchen, two once you have run more than one or carried a group role.

The order is deliberate. Experience comes first because a chef is bought on the rooms they have run, and every room has a size, a style, a covers count and a check average a reader can price instantly.

SectionWhat it is answeringWhere it goes
SummaryWhat size and style of kitchen can this person hold?Top, four lines
Kitchen experienceWhich rooms, how many covers, how many staff?Reverse chronological, with numbers
Operating numbersDid the food and labor lines move under them? Its own block, or inside each role
CertificationsIs the food safety and ACF paperwork current?Below education, with dates
Expert Tip

Write the room before you write the role

Chef titles are not standardized. A head chef in a 40-seat neighbourhood restaurant and a head chef in a 300-cover hotel dining room share nothing except the word.

So put the room next to the title: seats, weekday and Saturday covers, average check, kitchen staff on the biggest shift, whether banqueting or room service is attached, and annual food revenue if you may state it.

"Chef de Cuisine, 68 seats, 140 covers Friday and Saturday, $48 average check, 9 kitchen staff" tells an owner more than a paragraph on seasonality, and it lets them decide in four seconds whether you are a level up, a level down, or a match.

Run the finished file through the ATS resume checker first. Hotel groups and multi-site restaurant companies parse applications into a system before any chef reads them.

Choosing the best resume format for a chef resume

Reverse chronological. One page for a first head chef role, two once you have run multiple outlets, opened a site or carried a group food cost target.

Kitchen careers look messy on paper: a stage here, a seasonal contract there, a closure, a relocation. A functional format tries to hide that and instead reads as if the timeline is the problem. Keep the timeline and explain each short stint in a clause. A three-month stage at a good house is a credential, not a gap, provided you label it one.

Put the certification and its expiry in the header. An owner who has ever failed an inspection reads that line first, and a file they can verify without asking gets a call sooner.

Make use of a summary

Four lines: the size and style of kitchen you run, years in charge, the cost lines you hold, and one number with a direction and a period attached.

First head chef role adaptable resume summary example

Chef de cuisine with eight years on the line and two running a 68-seat Pacific Northwest restaurant at 140 covers on a weekend service. Hold a 29% food cost and a 31% labor cost against a $48 average check, with a nine-person kitchen brigade. Executive chef adaptable resume summary example

Executive chef with 16 years in professional kitchens and 6 leading a 120-seat restaurant turning 220 covers on a Saturday with $2.9m in annual food revenue. Brought food cost from 34.1% to 28.6% over seven quarters through menu engineering, a weekly waste log and renegotiated protein and produce terms, holding labor at 30.4% while covers grew 18%. ACF Certified Executive Chef, ServSafe Food Protection Manager, and a 21-person brigade with 2.1 years of average tenure.

Multi-outlet culinary director adaptable resume summary example

Culinary director with 16 years in kitchens and 6 at executive level, the last three holding the food and labor lines across three restaurants and a 240-room hotel banqueting operation with $11.4m in combined annual food revenue. Standardized recipe costing across all four outlets and moved group food cost from 33.2% to 29.4% in two years while opening a fourth site on schedule and on budget. Run the chef development program that has promoted 11 cooks into sous chef roles since 2021.

Adaptable resume employment history example

Executive Chef, Marisol Kitchen, Portland, OR, March 2020 to Present. Modern Pacific Northwest, 120 seats, 220 covers on a Saturday, $2.9m annual food revenue, brigade of 21.

Brought food cost from 34.1% to 28.6% across seven quarters using a quarterly contribution margin review, a weekly waste log by station and renegotiated protein and produce terms, while covers grew 18% over the same period.

Held labor at 30.4% through a rebuilt rota that matched prep hours to a rolling four-week covers forecast rather than to last year's calendar.

Rewrote the menu quarterly against plate cost and sales mix, moving nine low-margin items and lifting the average check from $54 to $61 without raising headline prices.

Built a station sign-off program with a written standard per station; sous chef turnover fell from three a year to one and average kitchen tenure reached 2.1 years.

Passed every county health inspection since 2020 with no critical violations, on a HACCP-based log reviewed at the Monday production meeting.

Put the plate cost, the covers and the labor line on the page

This is the block that separates a chef resume from a cook resume, and most candidates leave it off entirely.

A restaurant runs on a thin margin and two controllable costs: what the food costs and what the people cost. The chef is the only person who touches both every day. An owner reading your file is working out whether handing you the keys makes those two lines better or worse. Write the answer down.

Adaptable resume operating numbers example

Cost control: Food cost 34.1% to 28.6% over seven quarters. Labor cost held at 30.4% through a covers-forecast rota. Prime cost 59.0% at last full year close.

Volume: 220 covers Saturday, 95 to 130 weekdays, 42,000 covers a year. Average check $54 to $61.

Menu engineering: Quarterly review of contribution margin against sales mix across 34 items. Nine items removed or repriced in the last cycle; gross margin per cover up $4.80.

Purchasing: Three protein lines moved to direct accounts, landed cost down 9%. Two produce suppliers consolidated into one weekly delivery schedule with 30 day terms. Fresh inventory held at 1.8 days.

Waste: Weekly waste log by station; trim routed through a stock and staff meal cycle, recovering roughly $1,900 a month.

Compliance: HACCP plan owner. Every county inspection since 2020 clear of critical violations.

Six lines, and each one is a question an operator would otherwise have to ask at interview. Write them honestly and three rules apply.

Give the direction and the period, not the endpoint. "28.6% food cost" is a number; "34.1% to 28.6% over seven quarters" is evidence you moved it, and movement is the only part that transfers to a new kitchen.

Do not claim a figure you did not own. If you inherited a good food cost and held it through a supply shock, write that you held it; an experienced reader knows what that took. The industry is small, and an inflated number is checkable.

If your kitchen does not use these terms, translate. Institutional, healthcare and contract catering operations run on cost per meal or a contracted rate rather than a food cost percentage. Use your own metric, name it correctly, and give it the same shape: start, end, period.

Statistical insight

Most chefs work where the median is lowest

Food services and drinking places employ 64 percent of all chefs and head cooks, and that sector pays a median of $60,580 a year. Traveler accommodation employs 8 percent and pays a median of $74,380, while amusement, gambling and recreation employs 5 percent at $72,830 (BLS Occupational Outlook Handbook, Chefs and Head Cooks, May 2025 wage data, last modified 27 August 2026).

The gap between a restaurant kitchen and a hotel or resort kitchen is close to $14,000 a year at the median, and it is the largest pay decision available to most chefs who are not opening their own place.

Hotels hire on a slightly different file: banqueting volume, multiple outlets under one kitchen, forecasting against occupancy, and working inside a corporate P&L format. If you want that move, build up the covers number, the multi-outlet line and the forecasting sentence first.

Build a snapshot of your key skills

Twelve to sixteen entries in four groups: cost and commercial, kitchen operations, food and technique, systems.

Adaptable resume skills example

Cost and commercial: Recipe costing and plate cost, Menu engineering and contribution margin, Food and labor cost control, Purchasing and vendor negotiation, Inventory and par level management, Budget and P&L review

Kitchen operations: Brigade leadership, Rota and labor forecasting, Covers forecasting, Service pass management, Opening and new site build, Banqueting and events

Food and technique: Whole animal butchery, Fermentation and preservation, Pastry and bread section oversight, Allergen and dietary program design, Seasonal sourcing and grower relationships

Systems and compliance: HACCP plan ownership, ServSafe Food Protection Manager, MarketMan and Toast, Recipe management and costing software, Health inspection readiness

List your education and certifications

Certifications first if they are current, then culinary training, then degrees. A culinary degree helps early and stops mattering around year eight; certifications never stop mattering, because they get checked.

The American Culinary Federation runs the ladder the profession recognizes. The savory track runs Certified Foundational Cook (CFC), Certified Cook (CC), Certified Sous Chef (CSC), Certified Chef de Cuisine (CCC), Certified Executive Chef (CEC) and Certified Master Chef (CMC). The pastry track runs CFPC, CPC, CWPC, CEPC and CMPC. The federation also awards the Certified Culinary Administrator (CCA) and the Certified Culinary Educator (CCE), which are the ones to look at if your career is heading into multi-unit management or teaching (American Culinary Federation, accessed September 2026).

Write the designation, the awarding body and the date. Do not paraphrase a certification into a skill: "ACF Certified Executive Chef (CEC), American Culinary Federation, 2022" is verifiable; "executive-level culinary certification" is not.

Adaptable resume education and certifications example

ACF Certified Executive Chef (CEC), American Culinary Federation, 2022

ServSafe Food Protection Manager, National Restaurant Association, renewed 2024, valid to 2029

Oregon Food Handler Card, Oregon Health Authority, current

Associate of Applied Science, Culinary Arts, Oregon Culinary Institute, Portland, OR, 2012

HACCP for Food Service, 16 hour course, 2021

Some states and localities require chefs and head cooks to hold a food handler's certification (BLS Occupational Outlook Handbook, last modified 27 August 2026), and the person-in-charge requirement traces back to the FDA Food Code, whose current full edition is 2022. Check the rule in the state you are applying to rather than assuming your card travels.

Choose the right layout and design

Single column, 11 or 12 point body type, plain headings, no photograph and no knife-and-toque graphic. Restaurant groups and hotel companies run applicant tracking systems, and two-column layouts, text boxes and icons are where the parse breaks.

Do

Put seats, covers and brigade size next to every title, so the reader can size the room. Give food cost and labor cost as a movement across a stated period. Name the cuisine and the service style, since a bistro chef and a tasting-menu chef are different hires. Label stages as stages, with the house and the length. Keep the ServSafe or equivalent manager certification and its expiry in the header. State whether you have opened a site, and what the build cost and the opening date were.

Iconly/Bold/Close Square Don’t

Do not open with a paragraph about your philosophy of food; it is the part every file has and the part nobody reads. Do not list every dish you can cook. Do not write "responsible for" anywhere. Do not hide a short stint, because an unexplained four-month gap reads worse than a labeled stage. Do not claim a cost figure you did not own or cannot evidence. Do not send a two-page file for a first head chef role.

Chef job market and outlook

A small occupation growing quickly, with a hiring market driven by where you are willing to work rather than by whether jobs exist.

The industry backdrop is expansion. The National Restaurant Association's 2026 State of the Restaurant Industry report, released 12 February 2026, projects restaurant and foodservice sales of $1.55 trillion in 2026 and employment of 15.8 million jobs, with operators adding more than 100,000 jobs against real sales growth of 1.3 percent.

Sales are growing faster than real volume, which means menu prices are carrying the top line. In that market margin comes from cost control rather than from more customers, which is exactly the case your resume is making.

What salary you can expect as a chef

The median annual wage for chefs and head cooks was $62,470 as of May 2025, or $30.03 an hour (BLS Occupational Outlook Handbook, last modified 27 August 2026).

The spread around that median is driven by sector before talent. Traveler accommodation pays a median of $74,380 against $60,580 in food services and drinking places (BLS, May 2025), nearly $14,000 for the same job title. Hotels, resorts, casinos and clubs pay more because the operation is larger, the P&L is formal and volume is predictable; independent restaurants pay less and hand you more control over the food.

A resume moves two things. The first is the size of room you are credible for: an owner pays for covers, revenue and headcount, and a file stating all three for every kitchen gets considered for bigger rooms. The second is the bonus. Most chef packages above the median carry a bonus tied to food, labor or prime cost, and having hit a cost target before is what turns that into a number in the offer rather than a vague promise.

Key takeaways for a chef resume

  1. Put seats, covers, average check and brigade size next to every title so a reader can size the room.
  2. Give food cost and labor cost as a movement across a named period, not as a single number.
  3. Add a separate operating numbers block: cost, volume, menu engineering, purchasing, waste, compliance.
  4. Translate to your own metric if you work in healthcare, institutional or contract catering.
  5. Write the ACF designation and the food safety certification with the awarding body and the date.
  6. Label stages as stages; a short stint with a reason beats an unexplained gap.
  7. Keep it single column and parseable; hotel and restaurant groups screen through software first.

Chef resume questions, answered

How long should a chef resume be?

One page for a first head chef or chef de cuisine role. Two once you have run more than one outlet, opened a site, or held a group-level cost target. Never three. A long chef resume is usually a list of dishes that should have been a list of numbers.

Do I need a culinary degree to be a chef?

No. The Bureau of Labor Statistics gives the typical entry-level education as a high school diploma or equivalent, with five years or more of related work experience (BLS Occupational Outlook Handbook, last modified 27 August 2026). Experience is the real gate. A degree shortens the early years and is worth listing; after about year eight, what you have run matters more.

What food cost percentage should I put on my resume?

The one you actually held, with the starting point and the period. There is no single correct figure: a steakhouse and a pasta restaurant run structurally different food costs. What transfers is the movement and the method, so write "34.1% to 28.6% over seven quarters through menu engineering and renegotiated protein terms" rather than a bare number.

Is ACF certification worth it?

It is worth listing because it is verifiable, which is most of the point. The savory ladder runs Certified Foundational Cook, Certified Cook, Certified Sous Chef, Certified Chef de Cuisine, Certified Executive Chef and Certified Master Chef, with a parallel pastry track (American Culinary Federation, accessed September 2026). It counts for most in hotels, clubs, contract catering and education, where a credential ladder matches how the organization already thinks about roles.

How do I move from restaurants into hotels or resorts?

Rebuild the resume around volume, forecasting and multiple outlets, since hotel kitchens run banqueting, room service and more than one restaurant off overlapping teams. Lead with covers, banqueting capacity, outlets supported and any labor forecasting against a projection. The pay case is real: traveler accommodation pays a median of $74,380 against $60,580 in food services and drinking places (BLS, May 2025).

What do I write if I have never held a head chef title?

Write the sous chef role as what it actually was. Most sous chefs already run ordering, rotas, prep lists and full services without the title, and those are the responsibilities a head chef file has to show. Name the shifts you ran alone, the covers on them, the sections you owned and any cost line you touched, then say plainly that you want a first head chef role.
