Give every task a volume, a cycle time and an error rate
"Prepared quotes and processed orders" describes a job. It does not describe you doing it, because it is equally true of somebody who produces eight quotes a week with mistakes in them.
Write the three-part version: "Produce 85 quotes a week at a median turnaround of 4.2 hours, with 88 percent going back the same working day." Then the same for orders: "Enter roughly 310 order lines a week at a 0.4 percent error rate measured on credits and rebills."
Both numbers exist already. Your quoting system holds the timestamps, and the credit or rebill log is where the error rate lives. Ask for the report before you leave a job, because a sales desk resume with cycle time on it beats one without every time.

The Bureau of Labor Statistics publishes no separate occupation called "sales assistant". A declining occupation with 314,400 annual openings is not a closed door; it is a market where almost every opening is a replacement. That makes the hiring decision unusually risk-averse, and it is why an error rate and a cycle time on your resume do more than any list of duties. The specific numbers say you are the replacement who will not create work.
