Name the tasks you can be scheduled for, and the supervision level
What an assistant may legally do is set by each state's veterinary practice act, and it varies enough that the same sentence is accurate in one state and a problem in the next.
The California Veterinary Medical Board publishes the clearest version: veterinarians alone diagnose, prescribe and perform surgery; a Registered Veterinary Technician may induce anaesthesia, suture, extract teeth and place intravascular catheters under direct supervision; an unregistered assistant performs supporting duties under oversight and may operate radiographic equipment only after specific training and under direct supervision (California Veterinary Medical Board, checked September 2026). Montana writes it differently, exempting an employee of a licensed veterinarian performing activities determined by board rule under direct, immediate or indirect supervision, and excluding surgery and diagnosis (Montana Code Annotated 37-18-104, checked September 2026).
So write the supervision level into the sentence. "I restrain for venipuncture and position for radiographs under the veterinarian's direct supervision" is a sentence a practice manager can put straight into a rota. "Experienced in radiology" is not.

Writing the letter with no clinical experience yet
Animal handling hours count in this occupation and practice managers know it, so the letter's job is to make yours legible.
Write the non-clinical work as a job: the species, the number of animals, the hours, and the handling you did. Kennel work, a shelter, grooming, boarding, a stable, a farm, wildlife rehabilitation and pet retail all produce transferable restraint and observation experience. Then name the training you have done or are doing, because that is what converts hours into a hire.
The credential is worth stating even in progress. NAVTA's Approved Veterinary Assistant designation comes from a NAVTA-approved program and an examination administered through VetMedTeam, renewed every two years with at least ten hours of veterinary continuing education (NAVTA, checked September 2026). If you have worked in a research vivarium, name the AALAS ladder instead: the Assistant Laboratory Animal Technician is its entry tier ahead of LAT and LATG (AALAS, checked September 2026).
